Method

  1. Mix a high-hydration dough, rest with folds for 2 hours.
  2. Transfer to an oiled sheet pan, proof 45 minutes.
  3. Dimple deeply, pour olive oil into the pockets.
  4. Top with rosemary and flaky salt, bake at 230C for 20-25 minutes.
