Method
- Mix a high-hydration dough, rest with folds for 2 hours.
- Transfer to an oiled sheet pan, proof 45 minutes.
- Dimple deeply, pour olive oil into the pockets.
- Top with rosemary and flaky salt, bake at 230C for 20-25 minutes.
