Method

  1. Mix all ingredients; autolyse 30 minutes.
  2. Perform 4 sets of stretch and folds over 3 hours.
  3. Shape, proof overnight in a banneton.
  4. Bake in a preheated Dutch oven at 240C with steam for 35 minutes.
