Meringata with Summer Berries

A show-stopping meringue roll filled with cream and berries - pavlovas Italian cousin.

Method

  1. Whip whites to soft peaks, add sugar slowly to a glossy meringue.
  2. Spread on parchment and bake at 140C for 50 minutes.
  3. Spread whipped cream and berries over the warm meringue.
  4. Roll up carefully, chill, slice thick.
