Method

  1. Whisk yolks with sugar until pale.
  2. Fold in mascarpone, then whipped whites.
  3. Dip savoiardi in cooled espresso and Marsala, layer in a dish.
  4. Alternate cream and biscuits, chill 4 hours, dust with cocoa.
