Roasted Beet and Whipped Goat Cheese Crostini
Sweet roasted beets meet tangy whipped goat cheese on a charred baguette, finished with honey and thyme.

Method
- Roast whole beets in foil at 200C for 40 minutes until tender.
- Whip goat cheese with cream until fluffy and spreadable.
- Peel and dice the beets, toss with olive oil and salt.
- Grill baguette slices, spread with goat cheese, top with beets, drizzle honey and finish with thyme.
