Roasted Beet and Whipped Goat Cheese Crostini

Sweet roasted beets meet tangy whipped goat cheese on a charred baguette, finished with honey and thyme.

Method

  1. Roast whole beets in foil at 200C for 40 minutes until tender.
  2. Whip goat cheese with cream until fluffy and spreadable.
  3. Peel and dice the beets, toss with olive oil and salt.
  4. Grill baguette slices, spread with goat cheese, top with beets, drizzle honey and finish with thyme.
