Method

  1. Clean mussels thoroughly, discard any that stay open.
  2. Sweat shallot, garlic, and chili in olive oil.
  3. Add wine and mussels, cover for 4 minutes until shells open.
  4. Shower with parsley and serve with grilled sourdough.
