Gazpacho Andaluz

Ice-cold Andalusian tomato soup with cucumber, pepper, and olive oil - served in chilled bowls.

Method

  1. Soak bread in vinegar and a little water.
  2. Blend all vegetables with the soaked bread until silky.
  3. Stream in olive oil for a creamy emulsion.
  4. Chill at least 3 hours, serve very cold with garnishes.
