Butternut Squash Soup with Amaretti

Method

  1. Roast squash and pear at 200C for 30 minutes.
  2. Sweat onion, add squash, pear, and stock.
  3. Simmer 15 minutes, blend until silky.
  4. Serve with brown butter and crumbled amaretti.
