Butternut Squash Soup with Amaretti
Silky squash soup with a drizzle of brown butter and crumbled amaretti biscuits.

Method
- Roast squash and pear at 200C for 30 minutes.
- Sweat onion, add squash, pear, and stock.
- Simmer 15 minutes, blend until silky.
- Serve with brown butter and crumbled amaretti.
