Chilled Prawn Cocktail, Bistro Style

Poached tiger prawns on shredded little gems with a cognac-spiked marie rose sauce.

Method

  1. Poach prawns with lemon and bay in salted water for 2 minutes, chill quickly.
  2. Whisk mayo, ketchup, cognac, and cayenne for the marie rose sauce.
  3. Shred lettuce into tall glasses, top with prawns and sauce.
  4. Finish with a lemon wedge and cracked black pepper.
