Method
- Poach prawns with lemon and bay in salted water for 2 minutes, chill quickly.
- Whisk mayo, ketchup, cognac, and cayenne for the marie rose sauce.
- Shred lettuce into tall glasses, top with prawns and sauce.
- Finish with a lemon wedge and cracked black pepper.
