Method

  1. Saute shallot and zucchini until tender.
  2. Whisk eggs with parmesan, salt, and pepper.
  3. Pour over vegetables, cook 2 minutes on the stove.
  4. Bake at 190C for 10 minutes until just set, finish with basil.
